The Chilean wines are from Boya and Amayna - where the vines are windswept and ocean impacted - and J.Bouchon - preserving the historic character of the Maule Valley with distinctive, terroir-driven natural wines.

To start the evening, guests will be welcomed with Boya Rose then move into the following four-course dinner:

First Course - Grilled Delaware Oysters, sweet corn aioli, pimenton hot sauce, potato strings paired with Boya Sauvignon Blanc

Second Course - Charred quail, mustard bbq, radicchio, endive, and apple slaw
paired with Pais Salvaje Blanco

Third Course - Roasted leg of lamb, mint salsa verde, roasted new potatoes w/ piquillo aioli, charred greens paired with Amayna Pinot Noir

Dessert - Yerba mate cheesecake, macerated strawberries paired with Pais Salvaje

Dinner will start at 6:30 p.m. on Wednesday, June 12. Tickets are available through the restaurant website, www.elchechicago.com, for $100 per person
